Nancy's fabulous muffaletta sandwiches

Ingredients:
3 largeGarlic cloves, crushed
1 cupChopped green olives stuffed
-with pimientos
1 cupPitted and chopped
-"black-ripe" olives or
-Calamatas
1/2 cupRoasted sweet red peppers
-chopped
1 cupOlive oil
3 tbspChopped fresh parsley
2 tbspWhite wine vinegar
1/3 lbsSalami
1/2 lbsProvolone Cheese
1/2 lbsMild Cheese
1/3 lbsMortadella Cheese
1/3 lbsProsciutto
Procedures:
1The roasted red peppers are italian-style, available at many italian delis.
2When you"re ready for a sandwich the next day, assemble the following:
3one loaf fresh italian bread (one big round for a monster, individual hero (grinder, sub,..).
4Loaves will do fine for smaller sandwiches)
5cut the loaf (loaves) in half, and scoop out a little of the inside to make some room.
6Drizzle some of the olive oil and juice from the olive salad on each side of the open loaf -- use plenty.
7On the bottom, place some salami, olive salad, provolone, mild cheese, and mortadella.
8Top with the other half loaf.
9Slice into wedges (or eat the individual loaves).
