Ingredients:
4 tbspButter
2 medOnions, chopped
1/2 lbsMushrooms, sliced
1 1/2 cupPearl barley
3 cupChicken or beef broth
1/4 tspSalt
1/4 tspPepper
Garnish: chopped parsley
Procedures:
1Preheat oven to 350 degrees.
2Melt butter in a large casserole.
3Saute onions 2 minutes over medium heat.
4Add mushrooms and saute 5-7 minutes more.
5Add barley.
6Cook until lightly browned.
7Add 2 cups of broth, salt and pepper.
8Bring to a boil.
9Cover, reduce heat, and bake 45 minutes.
10Add remaining 1 cup of broth.
11Return to oven and bake 30 minutes more.
12Garnish with chopped parsley.
