| 1 | Preheat oven to 350 degrees. |
| 2 | Melt butter in a large casserole. |
| 3 | Saute onions 2 minutes over medium heat. |
| 4 | Add mushrooms and saute 5-7 minutes more. |
| 5 | Add barley. |
| 6 | Cook until lightly browned. |
| 7 | Add 2 cups of broth, salt and pepper. |
| 8 | Bring to a boil. |
| 9 | Cover, reduce heat, and bake 45 minutes. |
| 10 | Add remaining 1 cup of broth. |
| 11 | Return to oven and bake 30 minutes more. |
| 12 | Garnish with chopped parsley. |
