Beef & broccoli with garlic sauce

Ingredients:
1 lbsBeef steak
1 tbspVegetable oil
1/2 tspSalt
1 dashWhite pepper
1 1/2 lbsBroccoli
1 tspCornstarch
1 tspSesame oil
1/4 cupChicken broth
2 tbspVegetable oil
1 tbspVegetable oil
1 tbspFinely chopped garlic
1 tspFinely chopped ginger root
2 tbspBrown bean sauce
1 cupSliced canned bamboo shoots
Procedures:
1Trim fat from beef steak; cut beef lengthwise into 2-inch strips.
2Cut strips crosswise into 1/8-inch slices.
3Toss beef, 1 tbs vegetable oil, the salt and white pepper in a glass or plastic bowl.
4Cover and refrigerate 30 minutes.
5Pare outer layer from broccoli stems.
6Cut broccoli lengthwise into 1-inch stems; remove flowerets.
7Cut stems into 1 inch pieces.
8Place broccoli in boiling water; heat to boiling.
9Cover and cook 2 minutes; drain.
10Immediately rinse in cold water; drain.
11Mix cornstarch, sesame oil and broth.
12Heat 12-inch skillet or wok until very hot.
13Add 2 tbs vegetable oil; rotate skillet to coat bottom.
14Add beef; stir-fry 2 minutes or until beef is brown.
15Remove beef from skillet.
16Heat skillet until very hot.
17Add 1 tbs vegetable oil; rotate skillet to coat bottom.
18Add garlic, ginger root and bean sauce; stir-fry 30 seconds.
19Add bamboo shoots; stir-fry 1 minute.
20Stir in beef and broccoli.
21Stir in cornstarch mixture; cook and stir 15 seconds or until thickened.
