Ingredients:
1 1/2 lbsLean Beef Pot Roast
1 Onion, chopped
1 cupLima Beans, soaked overnight
-in water to cover
2 Potatoes, peeled and cut
-into quarters
4 Carrots, cut into 1-inch
-chunks
1/2 tspSalt
1/2 tspBlack Pepper, ground
2 Bay Leaves
Procedures:
1Brown the pot roast in a nonstick pan with the onion.
2Combine with the remaining ingredients in a dutch oven or crockpot.
3Add enough water to cover the ingredients.
4Cover tightly and simmer slowly in a 200°F oven or crockpot overnight.
