Ingredients:
2 tbspButter or margarine
3/4 cupMinced onion
1 medRed bell pepper, stemmed

2 canCream-style corn
1 tbspChopped fresh cilantro
1/3 cupTomatoes, peeled, seeded and

2 tbspCornstarch, blended with
2 tbspWater
1/2 cupSharp cheddar or jack
-cheese, shredded

8melt butter in a 10-12" frying pan over medium-high heat.
9Add onion and bell pepper; stir often until vegetables are limp, 5-8 minutes.
10Remove
11from heat and mix in corn, cilantro, tomatoes, cornstarch mixture, and salt and pepper to taste.
12scrape mixture into a shallow 1-?quart casserole; sprinkle with cheese.
13Bake in a 350°F.
14Oven until bubbling around edges, 30-40 minutes.
