Ingredients:
1/2 cupDark molasses
2 eachGreen onions, chopped
3 tbspCoarse Salt
3 tbspMustard Dry
1 tbspPaprika
1/4 tbspCayenne
1/2 tbspGarlic powder
6 tbspTamarind extract
1 tbspKitchen Boquet
1 tbspPepper, black
1/2 tbspFenugreek (Greek Hay)
1/2 tbspGinger
1/2 tbspCinnamon
1 tbspCloves, ground
1/2 tbspCardamom seeds
1/4 tbspTobasco sauce
6 ozRhine wine
2 ozRed wine
1 pintVinegar, white
1 eachCaramel coloring as desired
Procedures:
1Run all non liquid ingredients through a spice blender until they are a fine powder.
2Place over low heat with half of vinegar and simmer 1 hour.
3Add the rest of the vinegar a little at a time.
4Stir in tobasco, wines, kitchen bouquet and coloring.
5Cook 3 minutes to dissolve.
6Remove from heat.
7Pour into crock and let stand covered for 1 week.
8Strain through cheesecloth six times.
9Keeps refrigerated, also freezes very well.
