Instant mushroom sauce with fettuccine

Ingredients:
8 ozFettuccine (uncooked)
2 tbspOlive oil
1 lbsFresh white mushrooms
Sliced (about 5 cups)
1/2 cupSliced green onions
1 tspMinced garlic
1 cupDiced tomato
1/4 cupChopped fresh basil or
1 tbspDried basil, crushed
1 tspSalt
1/2 cupLowfat ricotta cheese
Procedures:
1Cook pasta according to package directions; drain, reserving ?cup cooking liquid; return pasta to pot.
2Meanwhile, in large skillet heat oil until hot.
3Add mushrooms, green onions and garlic; cook, stirring frequently, until mushrooms are tender, 5 to 6 minutes.
4Stir in tomato, basil and salt; cook until tomato is just warm, about 1 minute.
5To pasta in pot stir in ricotta cheese and enough cooking liquid to make a creamy sauce.
6Add mushroom mixture; toss.
7Serve with grated parmesan cheese and ground black pepper, if desired.
