Ingredients:
1/2 cupLong Grain White Rice (Not
Converted)
1/2 cupFrozen Pina Colada Mixer
Concentrate, thawed
1 1/2 cupMilk
1 Egg
1 tbspDark Rum
1/2 tspLemon Juice
Procedures:
1Cook rice in medium size saucepan following package directions.
2Stir in pina colada concentrate and milk.
3Bring to boiling over medium heat.
4Lower heat; cover and simmer 30 minutes or until the rice is very soft and the mixture thickens.
5(use a very low heat to avoid scorching).
6Beat egg slightly in small bowl.
7Stir in a little hot mixture.
8Return to saucepan; cook 1 minute, stirring constantly.
9Do not let boil.
10Remove saucepan from stove.
11Stir in rum and lemon juice.
12Pour into serving bowl.
13Cool to room temperature.
14Refrigerate until serving time.
