Ingredients:
1 lbsPork shoulder, cut in ? c
2 tbspFlour
2 tbspLard, --or -- other fat
1/2 cupChopped onions
1 Cl Garlic, minced
16 ozTomatoes, coarsely chopped
28 ozGreen chiles, diced
1/4 tspOregano
2 1/2 tspSalt
2 cupWater
Procedures:
1Dredge meat in flour.
2In a deep skillet or heavy pot, brown meat in lard.
3Add onion and garlic.
4Cook 5 minutes more or until onions are tender but not browned.
5Add remaining ingredients.
6Simmer, uncovered, 5 to 10 minutes more or until desired consistency.
