Procedures:
| 1 | *24 oysters equals about 2 pints.?wash fresh greens; tear into small pieces. | | 2 | Remove large stalks and ribs. | | 3 | (if using frozen greens, thaw and drain before proceeding). | | 4 | Place cleaned or thawed greens, cabbage, bay leaves, basil, thyme, oregano, allspice, cloves, and nutmeg into a large soup pot. | | 5 | Add stock and enough water to cover greens by 3 inches. | | 6 | Bring to a boil. | | 7 | Reduce heat. | | 8 | Cover; simmer while preparing remaining ingredients. | | 9 | Prepare seasoning mix. | | 10 | Cut pork and ham into bite-size pieces. | | 11 | Add meats to seasoning mix. | | 12 | Shake to coat lightly. | | 13 | Set seasoned meat aside while oil heats. | | 14 | Heat oil in a large, heavy skillet over medium-high heat. | | 15 | When oil is very hot, add seasoned meat; stir until brown on all sides. | | 16 | Remove browned meat with a slotted spoon; add to simmering greens. | | 17 | Reduce heat to medium; add onions, celery, bell pepper, and garlic to skillet. | | 18 | Cook until vegetables are wilted, about 5 minutes. | | 19 | Remove vegetables with a slotted spoon; add to simmering greens. | | 20 | Stir in sugar; simmer, uncovered for one hour. | | 21 | Season to taste with salt, black pepper and cayenne. | | 22 | Cover; simmer 2 hours. | | 23 | About 10 minutes before serving, gently stir in oysters with their liquor, green onions, and parsley. | | 24 | Cook until edges of oysters curl. | | 25 | Spoon about ?cup rice into each soup bowl. | | 26 | Spoon gumbo over rice; top with a pinch of file powder. | | 27 | Makes 8-10 good-sized servings.?to prepare seasoning mix: place all ingredients in a large plastic bag and shake to combine. |
