Ingredients:
10 ozFresh spinach OR
10 ozPackage frozen leaf spinach
10 ozFresh mustard greens OR
10 ozPkg frozen mustard greens
10 ozFresh turnip greens OR
10 ozPkg frozen turnip greens
10 ozFresh collard greens OR
10 ozPkg frozen collard greens
1/2 Medium cabbage, shredded
2 Bay leaves, minced
1 tspDried leaf basil
1 tspDried leaf thyme
1 tspDried leaf oregano
1/4 tspGround allspice
1/8 tspGround cloves
1/4 tspFresh grated nutmeg
4 quartGOOD chicken stock
1 lbsLean boneless pork
1 lbsSmoked ham
2/3 cupVegetable oil
2 Lg onions, chopped
4 Celery stalks, chopped
1 Lg green bell pepper, chop
4 Lg garlic cloves, chopped
2 tbspSugar
Salt
Fresh ground black pepper
Cayenne pepper
24 Shucked oysters with liquor*
12 Green onions, thinly sliced
1/2 cupFlat-leaf parsley, minced
3 1/2 tbspFile powder (approximately)
5 cupHot cooked rice
SEASONING MIX:
1/2 tspSalt
1/2 tspFresh ground black pepper
1/2 tspCayenne pepper
1/2 tspPaprika
1/2 tspOnion powder
1/2 tspGarlic powder
Procedures:
1*24 oysters equals about 2 pints.?wash fresh greens; tear into small pieces.
2Remove large stalks and ribs.
3(if using frozen greens, thaw and drain before proceeding).
4Place cleaned or thawed greens, cabbage, bay leaves, basil, thyme, oregano, allspice, cloves, and nutmeg into a large soup pot.
5Add stock and enough water to cover greens by 3 inches.
6Bring to a boil.
7Reduce heat.
8Cover; simmer while preparing remaining ingredients.
9Prepare seasoning mix.
10Cut pork and ham into bite-size pieces.
11Add meats to seasoning mix.
12Shake to coat lightly.
13Set seasoned meat aside while oil heats.
14Heat oil in a large, heavy skillet over medium-high heat.
15When oil is very hot, add seasoned meat; stir until brown on all sides.
16Remove browned meat with a slotted spoon; add to simmering greens.
17Reduce heat to medium; add onions, celery, bell pepper, and garlic to skillet.
18Cook until vegetables are wilted, about 5 minutes.
19Remove vegetables with a slotted spoon; add to simmering greens.
20Stir in sugar; simmer, uncovered for one hour.
21Season to taste with salt, black pepper and cayenne.
22Cover; simmer 2 hours.
23About 10 minutes before serving, gently stir in oysters with their liquor, green onions, and parsley.
24Cook until edges of oysters curl.
25Spoon about ?cup rice into each soup bowl.
26Spoon gumbo over rice; top with a pinch of file powder.
