Ingredients:
1 cupKosher salt OR
1 1/3 cupSalt
3 tbspSugar
1 tspPaprika
2 tspAllspice
2 tspThyme
1 tspSage
3 Crumbled bay leaves
8 lbsBeef or pork roast
Procedures:
1Combine salt, sugar, paprika, allspice, thyme, sage and bay leaf.
2Rub mixture well onto all of the meat.
3Put meat into plastic bag, adding any salt mixture that did not stick to meat.
4Seal bag.
5Put into refrigerator, and forget about it for two weeks.
6At the end of the curing time, soak in cold water for 24 hours before cooking to remove salt.
7Cook in water with such vegetables as desired.
