Ingredients:
1/2 cupOil
1 cupChopped onion
1/2 cupChopped bell pepper
1 cupChopped fresh parsley
3 cupFresh or canned kernel corn
2 tbspChopped garlic
1 cupChicken stock
1 cupWater
1 tbspSoy sauce
2 lbsPork-cut 1"cubes
Louisiana hot sauce to taste
Salt to taste
Procedures:
1Over med .
2Heat in large skillet, heat the oil and then saute the onions, bell pepper, and parsley until the onions are clear.
3Add corn and stir, then the garlic, stock and water and seasonings and stir again.
4Reduce the heat to low, cover and simmer for 30 min., then add the pork, cover and let simmer another hour, stirring occasionally.
