| small | Celery stalk, diced | | 1
| med | Carrot, diced | | 1
| small | Sweet red pepper, cored | | | -seeded, and diced | | 1
| tbsp | Chili powder | | 1/4
| tsp | Cayenne pepper | | 1
| | Bay leaf | | 1/2
| tsp | Ground cumin | | 1
| tbsp | Brown sugar | | 1/2
| tsp | Dried basil, crushed | | 1
| can | 15-oz. kidney beans | | | -undrained | | 1
| can | 15-oz. tomato puree | | 1/2
| tsp | Salt | | | Black pepper, freshly ground | | 1/2
| cup | Salted cashews, coarsely | | | -chopped |

Procedures:
| 1 | Heat olive oil in lg. | | 2 | Skillet. | | 3 | Add garlic, onions, zucchini, celery, carrot, and red pepper, and saute 5 mins. | | 4 | Add chili powder, cayenne, bay leaf, cumin, brown sugar, and basil. | | 5 | Cook over low heat until mixture is fragrant, 2 mins. | | 6 | stir in kidney beans with liquid and tomato puree and simmer 20 mins. | | 7 | Season to taste w/salt and pepper and simmer until vegetables are tender but not mushy and flavors blended, 10 mins. | | 8 | Longer. | | 9 | Remove bay leaf. | | 10 | Stir in cashews and serve immediately. |
