West of the pecos chili

Ingredients:

NEW MEXICO COOKING
3 tbspVegetable oil
6 lbsLean beef, cut in 1" cubes
1/2 cupChili powder
2 tspSalt
2 tbspGround oregano
1 tbspCayenne pepper
4 clGarlic
8 cupBeff stock or broth
1/2 cupMasa harina or cornmeal
1/2 cup-Water, cold
Procedures:
1Heat oil in a lg.
2Dutch oven or heavy pot over med. heat.
3Add beef, about 1-lb.
4At a time, and brown, stirring constantly.
5Remove each pound as it browns.
6Return browned meat to pot.
7Add seasonings and beef stock or broth.
8Cover and simmer 1.?to 2 hrs.
9Skim off excess fat.
10Combine masa harina with cold water and stir into chili.
11Simmer an additional 30 mins.
