Ingredients:

| tbsp | Vegetable oil | | 6
| lbs | Lean beef, cut in 1" cubes | | 1/2
| cup | Chili powder | | 2
| tsp | Salt | | 2
| tbsp | Ground oregano | | 1
| tbsp | Cayenne pepper | | 4
| cl | Garlic | | 8
| cup | Beff stock or broth | | 1/2
| cup | Masa harina or cornmeal | | 1/2
| cup | -Water, cold |

Procedures:
| 1 | Heat oil in a lg. | | 2 | Dutch oven or heavy pot over med. heat. | | 3 | Add beef, about 1-lb. | | 4 | At a time, and brown, stirring constantly. | | 5 | Remove each pound as it browns. | | 6 | Return browned meat to pot. | | 7 | Add seasonings and beef stock or broth. | | 8 | Cover and simmer 1.?to 2 hrs. | | 9 | Skim off excess fat. | | 10 | Combine masa harina with cold water and stir into chili. | | 11 | Simmer an additional 30 mins. | | 12 | author - clyde casey |
