Almond ricotta custard

Ingredients:
1 cupRicotta cheese
1 cupEvaporated milk
3 Eggs, beaten
3/4 cupSugar
1/2 tspAlmond extract
Cinnamon or nutmeg
1 tbspLemon juice
1 tbspAlmonds, thin sliced
Procedures:
1Preheat oven to 350°F.
2Press moisture out of ricotta cheese.
3Scald milk and pour over beaten eggs.
4Pour out the mixture into a blender or food processor and add the rest of the ingredients.
5Beat.
6Pour into shallow buttered dish.
7Dust with cinnamon or nutmeg.
8Sprinkle thin sliced alomnds on top.
9Set casserole dish inside larger pan partially filled with hot water.
10Cook 45 minutes at 350°F.
11To test if done, insert knife near edge of dish.
12If knife comes out clean, the custard will be done when cool.
13Let cool before serving.
14Top with chocolate curls if desired.
