Ingredients:

| lbs | Cooking apples, tart* | | 4
| oz | Sugar (or to taste) | | | Juice of 1 lemon | | 2
| | Large eggs, separated |

Procedures:
| 1 | * peeled, cored and thinly sliced. | | 2 | -- cook the apple slices in about 2 t of water, stirring occasionally until they form a puree. | | 3 | Add about ?of the sugar, the lemon juice, and the egg yolks: mix well. | | 4 | Put into an ovenproof dish and bake at 350f for 20 minutes. | | 5 | Meanwhile, whisk the egg whites until stiff, folding in the remaining sugar. | | 6 | Pile the meringue evenly on top of the apple mixture, return the dish to the oven, and bake for about 10 minutes. | | 7 | Serve hot or cold. |
