Ingredients:
FILLING
1/4 cupBrown sugar
2 tbspCornstarch
1 cupWater
5 cupApples, peeled and sliced
1/2 tspCinnamon
1/4 tspNutmeg
1 tbspLemon juice
PASTRY
2 cupFlour
2/3 cupShortening
1/2 tspSalt
2 Egg yolks, beaten
1/4 cupCold water
1 tbspLemon juice
GLAZE
1/2 cupPowdered sugar
1 tbspMilk
1 tbspButter or margarine
1/2 tspVanilla
Procedures:
1Combine sugar, cornstarch and butter in saucepan.
2Mix until well blended, add apples.
3Heat to boiling, stirring constantly.
4Remove from heat, stir in spices and lemon juice, set aside.
5For pastry, combine egg yolks, water and lemon juice.
6Blend into flour.
7Mixture will form a ball, divide in half.
8On lightly floured board, roll dough between 2 pieces of waxed paper to fit bottom and halfway up sides of 9x13 inch pan.
9Spread apple mixture over pastry.
10Roll remaining pastry to fit pan.
11Place on top of filling.
12Fold bottom pastry over and press to seal.
13Cut a few slits in top.
14Bake for 40 minutes at 400 degrees or until lightly browned.
15Combine ingredients for glaze and drizzle over cooled pastry.
