Ingredients:
4 lbsChuck, ext lean, grind
1 tbspOregano
2 lbsPork, ext lean, grind
2 tbspPaprika
1 lbsChuck, ext lean, ? cubes
2 tbspMsg
2 Onions, large, fine chopped
9 tbspChili powder, light
10 Garlic cloves, fine chopped
4 tbspCumin
1/2 cupOil or kidney suet
4 tbspBeef bouillon
1 tspMole, powdered *
24 ozOld milwaukee beer
1 tbspSugar
2 cupWater
1 tspCoriander seed
8 ozTomato sauce
1 tspLouisiana red hot sauce
1 tbspMasa harina flour
Salt to taste
Procedures:
1* also called mole poblano in a large pot, add paprika, oregano, msg, chili powder, cumin, beef bouillon, beer and 2 cups water.
2Let simmer.
3In a separate skillet, brown meat in 1 lb .
4Or 1 ?lb .
5Batches with wesson oil or suet.
6Drain and add to simmering spices.
7Continue until all meat is done.
8Saute chopped onion and garlic in 1 t. oil or suet.
9Add to spices and meat mixture.
10Add water as needed.
11Simmer 2 hours.
12Add mole, sugar, coriander seed, hot sauce and tomato sauce.
13Simmer 45 min. dissolve masa harina flour in warm water to form a paste.
14Add to chili.
15Add salt to taste.
16Simmer for 30 minutes.
17Add additional louisiana hot sauce for hotter taste.
