Ingredients:

| tbsp | Butter | | 3
| tbsp | Chopped onion | | 2
| tsp | Paprika | | 1
| tbsp | Flour | | 1/2
| tsp | Thyme | | 1/2
| cup | Chicken stock | | 1/2
| cup | Heavy cream | | 2
| tsp | Lemon juice | | 1
| dash | Salt to taste | | 1
| dash | Ground pepper -taste | | 1
| tsp | Cognac | | 1/4
| cup | Sour cream |

Procedures:
| 1 | Melt 1 tbsp. of butter in a small saucepan and cook the onion until wilted. | | 2 | Sprinkle with paprika, flour, and thyme, stirring. | | 3 | Stir in the chicken stock, using a wire whisk, and simmer about 3 minutes. | | 4 | Add the cream and bring to a boil. | | 5 | Add the lemon juice, salt, pepper and cognac. | | 6 | Strain the sauce through a sieve. | | 7 | Return to the heat and stir in the remaining butter and the sour cream. | | 8 | Bring just to a boil, but do not boil. | | 9 | Yield: 1 ?cups |
