Paprika sauce for pojarski

Ingredients:
2 tbspButter
3 tbspChopped onion
2 tspPaprika
1 tbspFlour
1/2 tspThyme
1/2 cupChicken stock
1/2 cupHeavy cream
2 tspLemon juice
1 dashSalt to taste
1 dashGround pepper -taste
1 tspCognac
1/4 cupSour cream
Procedures:
1Melt 1 tbsp. of butter in a small saucepan and cook the onion until wilted.
2Sprinkle with paprika, flour, and thyme, stirring.
3Stir in the chicken stock, using a wire whisk, and simmer about 3 minutes.
4Add the cream and bring to a boil.
5Add the lemon juice, salt, pepper and cognac.
6Strain the sauce through a sieve.
7Return to the heat and stir in the remaining butter and the sour cream.
8Bring just to a boil, but do not boil.
9Yield: 1 ?cups
