Pineapple snow & custard sauce

Ingredients:
1 tbspUnflavored gelatin (1 pkg)
2 tbspSugar
1/8 tspSalt
1/2 cupWater
1 1/2 cupUnsweetened pineapple juice
2 Egg whites
CUSTARD SAUCE, optional
2 Eggs, slightly beaten
2 tbspSugar
1/4 tspSalt
1 1/2 cupSkim milk
1 tspVanilla
Procedures:
1Combine gelatin, sugar and salt in saucepan.
2Add water.
3Place over low heat, stirring constantly until gelatin is dissolved.
4Remove from heat.
5stir in pineapple juice.
6Chill until mixture begins to thicken.
7Add egg whites and beat with electric beater until mixture begins to hold its shape.
8spoon into dessert dishes.
9Chill until firm.
10Serve plain or with soft custard sauce.
11Yield 6 cups.
12?cup serving pineapple snow without sauce: 45 cal, ?fruit exchange 1.7 gm protein, 0 fat, 9.5 gm carbohydrate, 45.9 mg sodium, 96.4 mg potassium, 0 fiber, 0 cholesterol
13soft custard sauce combine all sauce ingredients except vanilla.
14Cook in double boiler over hot, not boiling, water.
15Stir constantly.
16When custard coats a silver spoon, remove from heat.
17Cool at once by placing pan in a bowl of ice water.
18Stir in vanilla.
19Serve over fruit or gelatin.
20Yield 2 cups.

22my note: if you just want to use 2 egg yolks from the pineapple snow, try a half quantity of the sauce ingredients.
