Carribean ginger pepper sauce

Ingredients:
2 tbspJalapenos, seeded, minced
1 tspCayenne pepper
1/4 tspSalt
2 tbspCornstarch
1/4 cupGranulated sugar
1/4 cupLime juice, fresh preferred
1/4 cupUnsweetened pineapple juice
1 cupWater
Soy sauce
2 tbspFresh ginger, peeled, shredded
1/2 cupPineapple chunks
2 tbspChardonnay or dry white wine
1 tbspChopped cilantro
Procedures:
1In a saucepan, blend the salt, cornstarch, sugar, lime juice, and pineapple juice until smooth.
2Premix and gradually stir in the water, soy sauce, ginger, jalapeno, and cayenne.
3Cook over medium heat, stirring constantly unyil the sauce is thick and transparent.
4Finish the sauce by stirring in the pineapple chunks, chardonnay, and cilantro.
5Broil swordfish or chicken breast, basting with lemon and butter.
6Then serve on a bed of rice, topped with a liberal portion of warm sauce.
