Basic white sauce & cheese sauce

Ingredients:
WHITE SAUCE
1 tbspBetty's Butter
1 tbspArrowroot
1 cupEvaporated Milk
1/8 tspSalt
1/8 tspWhite pepper
CHEESE SAUCE
1/4 cupLow-fat Cheese sauce
-Shredded
Procedures:
1Heat butter in a small non-stick skillet, then in arrowroot.
2Gradually add milk, cook stirring until sauce thickens.
3Stir in salt & pepper.
4Variations: thicker sauce...add more butter and more arrowroot for each cup of milk.
5Cheese sauce: add ?cup shredded low-fat cheese to hot sauce; cook, stirring, until melted.
