Ingredients:

| cup | Tomatoes, chopped fresh or | | | -stewed | | 1
| cup | Onion, minced | | 1/2
| cup | Dried green onion, plumped | | | -in a small amt of water | | | Salt & pepper | | 1 1/2
| cup | Water | | 1
| can | Mushroom stems & pcs, 4 oz |

| 1 | The moose that is taken late in the season & destined to feed many alaskan families is often a dry & lean animal. | | 2 | To lovers of fat beef, late-season moose isn"t much of a treat. | | 3 | While living in flennallen one winter, we learned from a family in gakona how to make a sauce to eliminate some of the problem. | | 4 | It"s good on fat moose or beef, too. | | 5 | in frying pan over medium heat bring fat to hot. | | 6 | Combine all vegetables except mushrooms in a bowl & salt & pepper to taste. | | 7 | Pour them into hot grease & saute for 3 mins. | | 8 | Add water & bring to a boil. | | 9 | Cook for 10 mins, stirring occasionally. | | 10 | Drain mushrooms, add them to sauce & heat for another 2 mins. | | 11 | Add extra liquid if mixture appears too dry. | | 12 | Serve either on or beside meat. |
