Ingredients:

| cup | Unsalted Butter | | 3
| large | Egg Yolks | | 1 1/2
| tsp | Hot Water | | 2
| tsp | Orange Juice | | 1
| tsp | Lemon Juice | | 1
| tsp | Minced Orange Zest | | 1/4
| tsp | Salt | | 2
| dash | Tabasco Sauce |

Procedures:
| 1 | Melt butter. | | 2 | Heat egg yolks and 1-?ts water in top of double boiler over simmering water, whisking constantly, until yolks triple in volume. | | 3 | Remove pan from water; whisk butter very gradually into egg yolks. | | 4 | Whisk in remaining ingredients. | | 5 | Let stand at room temperature until ready to serve. | | 6 | Serve with cooked fresh asparagus |
