Maltaise asparagus sauce

Ingredients:
1/2 cupUnsalted Butter
3 largeEgg Yolks
1 1/2 tspHot Water
2 tspOrange Juice
1 tspLemon Juice
1 tspMinced Orange Zest
1/4 tspSalt
2 dashTabasco Sauce
Procedures:
1Melt butter.
2Heat egg yolks and 1-?ts water in top of double boiler over simmering water, whisking constantly, until yolks triple in volume.
3Remove pan from water; whisk butter very gradually into egg yolks.
4Whisk in remaining ingredients.
5Let stand at room temperature until ready to serve.
6Serve with cooked fresh asparagus
