2 tbspLow-sodium soy sauce
5 tbspWater
1 tbspDry sherry, or to taste
2 tbspApple juice concentrate

6add 1 teaspoon fresh grated ginger root, ?to 1 teaspoon fresh minced garlic, ?to 1 teaspoon grated orange rind, ?teaspoon dijon style no-salt added mustard, ?teaspoon sesame oil or ?teaspoon hot chili oil.
7to thicken marinade to be use as gravy, combine 1 teaspoon cornstarch or arrowroot and 2 tablespoons cold water.
