Ingredients:
3 tbspButter
1/4 cupMinced onion
1 cupWhite vinegar
1 cupTomato sauce
1/4 cupWorcestershire sauce
2 tspSugar
1 tspSalt
1/2 tspFresh ground black pepper
1/8 tspCayenne
Ds Tabasco sauce
Procedures:
1The center of mid-south barbecue, memphis offers a range of sauces that take the high middle ground between eastern and western styles.
2Like this version, they are often medium-bodied mixtures, moderate in sweet, heat, and everything else except taste.
3in a saucepan, melt the butter over medium heat.
4Add the onions and saute for 6 to 8 minutes, or until the onions begin to turn golden.
5Stir in the remaining ingredients, reduce the heat to low, and cook until the mixture thickens, approximately 20 minutes.
6Stir frequently.
7use the sauce warm.
8It keeps, refrigerated, for a couple of weeks.
