Ingredients:
8 cupMixed Greens, Bite-Size
1/4 cupGreen Onion/Tops, Chopped
1/4 cupGreen Pepper, Chopped
1/4 cupRipe Olives, Sliced, Pitted
2 largeTomatoes, Cut Into Wedges
AVOCADO SALAD DRESSING
1 largeAvocado, Pitted
2 tbspLemon Juice
1/2 cupDairy Sour Cream
1/4 cupSalad Oil
1 tspSeasoned Salt
1/4 tspChili Powder
GARNISHES
1/4 cupCheddar Cheese, Shredded
1 cupCorn Chips, Coarsely Crushed
Procedures:
1Combine the greens, green onions, green pepper, olives and tomatoes in a salad bowl.
2Cover and refrigerate.
3Prepare the avocado salad dressing.
4To serve: sprinkle the salad ingredients with the cheese, the the corn chips.
5Top with the avocado salad dressing and toss lightly to coat.
6Avocado salad dressing: mash the avocado and lemon juice together.
7Add the rest of the ingredients, blending well, and cover.
8Refrigerate for several hours to blend the flavors before serving.
