Ingredients:

| large | Clove of garlic | | 28
| oz | Canned tomatoes | | 4
| tbsp | Tomato paste | | 1/2
| tsp | Sugar | | 1/2
| tsp | Salt | | 1
| tsp | Dried oregano | | 4
| large | Fresh basil leaves, chopped | | 1/4
| tsp | Hot red pepper flakes | | 1/4
| tsp | Freshly ground black pepper |

Procedures:
| 1 | In a food processor, mince garlic. | | 2 | Place a strainer over a bowl and drain tomatoes by gently pressing and crushing them with a wooden spoon to remove most, but not all, liquid. | | 3 | Transfer crushed tomatoes to the food processor and discard or save liquid in bowl for another use. | | 4 | Add tomato paste (adjusting it to the amount of liquid remaining in the drained tomatoes..sauce must not be too thick or too runny), sugar, and salt and process ingredients a few seconds to combine. | | 5 | Transfer to a non-aluminum bowl. | | 6 | Stir in oregano, basil, hot pepper flakes, and pepper. | | 7 | Cover and refrigerate until using. | | 8 | Makes about 1 ?cups ~-- |
