No-cook tomato sauce

Ingredients:
1 largeClove of garlic
28 ozCanned tomatoes
4 tbspTomato paste
1/2 tspSugar
1/2 tspSalt
1 tspDried oregano
4 largeFresh basil leaves, chopped
1/4 tspHot red pepper flakes
1/4 tspFreshly ground black pepper
Procedures:
1In a food processor, mince garlic.
2Place a strainer over a bowl and drain tomatoes by gently pressing and crushing them with a wooden spoon to remove most, but not all, liquid.
3Transfer crushed tomatoes to the food processor and discard or save liquid in bowl for another use.
4Add tomato paste (adjusting it to the amount of liquid remaining in the drained tomatoes..sauce must not be too thick or too runny), sugar, and salt and process ingredients a few seconds to combine.
5Transfer to a non-aluminum bowl.
6Stir in oregano, basil, hot pepper flakes, and pepper.
7Cover and refrigerate until using.
