Savory braised short ribs with horseradish sauce

Ingredients:
SHORT RIBS
4 lbsBeef Chuck Shrot Ribs *
10 ozCondensed Beef Broth
1 cupCoarsely Chopped Onion
1 cupWater
4 Whole Peppercorns
2 tspWorcestershire Sauce
1 Clove Garlic, Crushed
1/2 tspDried Majorum Leaves
Horseradish Sauce
3 tbspUnbleached Flour
1/2 cupWater
GARNISHES
Tomato Wedges
Sprigs Parsley
HORSERADISH SAUCE
1/4 cupSour Cream
1 tbspPrepared Mustard
2 1/2 tbspPrepared Horseradish
1/8 tspSalt
Procedures:
1* ribs should be cut into serving-size pieces.
2~--------------------------------------------------------------------- ~-- trim any excess fat from short ribs.
3Brown short ribs well on all sides (about 30 minutes) in dutch oven over medium heat.
4Pour off drippings.
5Add broth, onion, 1 c water, peppercorns, worchstershire sauce, garlic, bay leaf and marjoram.
6Bring to a boil; reduce heat, cover and cook slowly 2 to 2-?hours or until tender, turning once.
7Meanwhile, prepare horseradish sauce.
8Place short ribs on serving platter and keep warm.
9Skim fat from cooking liquid.
10Combine flour with 1 /2 cup water, mixing until smooth; combine with cooking liquid, bring to a boil, stirring constantly, reduce heat and cook slowly 3 minutes.
11Strain, if necessary, and serve with short ribs.
12Garnish platter with tomato wedges and parsley.
13Serve horseradish sauce with short ribs.
14Horseradish sauce: combine sour cream, horseradish, mustard and salt in small bowl.
15Cover and refrigerate.
