Ingredients:

| tbsp | Butter | | 2
| tsp | Shallots -- minced | | 2
| tbsp | Paprika | | 1/2
| cup | Dry sherry | | 2
| tbsp | Tomato paste | | 2
| tbsp | Brandy | | 2
| cup | Cream Sauce (see index) | | 1/8
| tsp | Dried thyme | | | Pn Cayenne pepper |

Procedures:
| 1 | Melt butter in saute pan. | | 2 | Add the shallots and saute over medium heat for 2 to 3 minutes, until translucent. | | 3 | Add the paprika and sherry, and saute for 2 minutes. | | 4 | Stir in the tomato paste. | | 5 | Add the brandy to the saute pan, and carefully light it with a match. | | 6 | When the alcohol has burned off, add the cream sauce, thyme, and cayenne. | | 7 | Cook for 2 minutes more. | | 8 | Makes 2 ?cups. | | 9 | recipe by : red lion inn cookbook |
