Seafood newburg sauce`

Ingredients:
2 tbspButter
2 tspShallots -- minced
2 tbspPaprika
1/2 cupDry sherry
2 tbspTomato paste
2 tbspBrandy
2 cupCream Sauce (see index)
1/8 tspDried thyme
Pn Cayenne pepper
Procedures:
1Melt butter in saute pan.
2Add the shallots and saute over medium heat for 2 to 3 minutes, until translucent.
3Add the paprika and sherry, and saute for 2 minutes.
4Stir in the tomato paste.
5Add the brandy to the saute pan, and carefully light it with a match.
6When the alcohol has burned off, add the cream sauce, thyme, and cayenne.
7Cook for 2 minutes more.
8Makes 2 ?cups.
