Ingredients:
1 1/4 cupVanilla wafers, crushed
3/4 cupAlmonds, toasted, coarsely
-ground
1 1/2 cupSugar, divided
1/4 cupButter (or marg.), melted
24 ozCream cheese, softened
2 tbspCocoa, unsweetened
12 ozChocolate, bittersweet, meltd
4 Eggs
3/4 cupAmaretto di Amore
1/4 cupCream, whipping
20 Almonds, blanched, toasted
4 ozChocolate, bittersweet
-melted and divided
Procedures:
1Combine vanilla wafers, ground almonds, ?cup sugar, and butter; stir well.
2Press firmly on bottom of a 9" springform pan.
3Set aside.
4beat cream cheese until fluffy in a large mixing bowl; gradually beat in remaining 1-?cups sugar and cocoa until smooth.
5Add 12 ounces melted chocolate, beating well.
6Add eggs, amaretto, and whipping cream, mixing well.
7pour mixture into prepared pan.
8Bake at 350 °F for 60 to 65 minutes or until center is just set.
9cool completely.
10Cover and refrigerate overnight.
11to serve, remove sides of pan and place on serving plate.
12Drizzle 3-ounces melted chocolate over cheesecake.
13Dip half of each whole almond in remaining 1-ounce melted chocolate and arrange on cheesecake.
