Ancho red-onion flapjacks

Ingredients:
1 largeRed onion, julienned
1 tbspAncho powder
2 tspCumin powder
2 cupFlour
1 cupCorn meal
2 tspSalt
1 tbspLemon juice
1 tbspSugar
2 cupBeer
Procedures:
1In a large mixing bowl, combine onions, ancho powder, cumin, flour, corn meal, salt, lemon juice and sugar.
2Stir well to combine.
3Add beer, stirring to form a pancake-thin batter.
4Coat a griddle with a little oil and heat over medium heat.
5Pour ?cup of batter out at a time to form ca,es, flattening if required.
6Cook until golden brown, about 2-3 minutes.
7Flip cakes and continue cooking until second side is browned.
8Reseve cakes on a warmed plate.
9Serve with chili.
