Apple walnut cake with apple cider glaze

Ingredients:
1 1/2 cupVegetable oil
2 cupGranulated sugar
3 Eggs
2 cupUnbleached all-purpose
-flour, sifted
1/8 tspGround cloves
1 1/4 tspGround cinnamon
1/4 tspGround mace
1 tspBaking soda
1/2 tspSalt
1 cupWhole-wheat flour, sifted
4 cupShelled walnuts, coarsely
-chopped
1 1/4 cupCoarse chunks of peeled and
-cored apples
3 tbspApplejack

APPLE CIDER GLAZE
4 tbspSweet butter
2 tbspBrown sugar
6 tbspGranulated sugar
3 tbspApplejack or apple brandy
4 tbspSweet cider
2 tbspFresh orange juice
2 tbspHeavy cream
Preheat oven to 325F.
Procedures:
1In a large bowl, beat vegetable oil and sugar until thick and opaque.
2Add eggs, one at a time, beating well after each addition.
3Sift together flour, cloves, cinnamon, mace, baking soda and salt, then stir in whole-wheat flour.
4Add to oil and egg mixture and mix until well blended.
5Add walnuts, apple chunks and applejack all at once and stir batter until pieces are evenly distributed.
6pour batter into a greased 10-inch round cake pan.
7Bake for 1 hour and 15 minutes or until cake tester inserted in center comes out clean.
8apple cider glaze:
9melt butter in a small saucepan and stir in both sugars.
10Add remaining ingredients, stir, and bring to a boil.
11Reduce heat slightly and cook for 4 minutes.
12Remove from heat and cool slightly.
13Pour while still warm over warm cake.
14makes 1 ?cups glaze.
