Banana fruit cake

Ingredients:
3/4 cupButter
2 cupBrown sugar
4 Eggs
2 1/2 cupAll-purpose flour
1 cupWalnuts, chopped
3 cupCandied fruit
2 cupDates, chopped
1 tbspOrange juice
1 tspOrange rind, grated
1/2 tspOrange extract
1 tspBaking powder
1 tspBaking soda
1 tspSalt
1/4 tspGround nutmeg
1/4 tspGround cloves
1 tspGround cinnamon
1 1/2 cupMashed bananas
Procedures:
1Recipe by: rose murray, the christmas cookbook great canadian prepare two 2 litre (9" x 5") loaf pans.
2Preheat oven to 300°F.
3In a large bowl combine the fruit, dates, pineapple and walnuts.
4Dredge them with ?cup of the flour.
5Sift the remaining flour together with the baking powder, baking soda, salt, cinnamon, nutmeg and cloves.
6Set aside.
7Cream the butter, add the sugar and beat until the mixture is light and fluffy.
8Beat in the eggs, one at a time.
9Beat in the orange rind, orange juice and orange extract.
10Mash the bananas with a fork.
11(a food processor will tend to liquefy the bananas and this will change the texture of the cake).
12Alternately stir the bananas and the flour mixture into the creamed mixture.
13Stir in the floured fruit and nuts.
14Turn into the prepared pans and bake for 2 hours and 15 minutes, or until a skewer inserted into the middle of each cake comes out clean.
15Cool in the pans for 20 minutes, then turn out onto racks.
16Yields about 5 pounds of cake.
