Ingredients:
2/3 cupNonfat milk
2 tspVinegar
2 1/3 cupFlour
1 2/3 cupSugar
1 1/4 tspBaking powder
1 1/4 tspBaking soda
1 tspSalt
2 Eggs
1 Egg white
1 1/4 cupMashed very ripe bananas
(about 3)
3/4 cupPureed Dates (replaces ?/td>
Cup shortening)
1 tspVanilla
1/2 cupChopped walnuts, optional
Powdered Sugar, optional
Procedures:
1Mix nonfat milk and vinegar and let stand until thickened.
2Sift together flour, sugar, baking powder, baking soda and salt into mixing bowl.
3Stir to blend.
4Lightly beat eggs and egg white.
5Add to flour mixture with bananas, pureed dates, soured milk, vanilla and nuts.
6Stir just until blended.
7Pour into 12-cup bundt pan sprayed with non-stick vegetable spray.
8Bake at 350 °F.
945 to 55 minutes or until cake tests done.
10Remove to wire rack to cool.
11If desired, sprinkle with powdered sugar and serve.
12Makes 16 servings.
13Note: in place of nonfat milk and vinegar, substitute 2/3 cup buttermilk if desired.
