Ingredients:

| tbsp | Butter | | 1
| small | Onion, minced | | 3
| cup | Rhubarb, chopped | | 2/3
| cup | Granulated sugar | | 1/4
| cup | Lemon juice, fresh | | 1
| tsp | Mint | | 1/2
| tsp | Lemon zest, grated |

Procedures:
| 1 | Melt butter in large skillet over medium heat; cook onion for 3 minutes or until soft. | | 2 | Add rhubarb, sugar, lemon juice, mint and lemon zest. | | 3 | Bring to boil, stirring to dissolve sugar. | | 4 | Reduce heat and simmer, uncovered, for 5 to 7 minutes or until thickened. | | 5 | Season to taste with salt and pepper. | | 6 | Chutney can be prepared, cooled, covered and refrigetated for up to 2 days. | | 7 | Serve with lamb |
