| med | Tomatoes, peeled, seeded | | | -chopped | | 1/2
| small | Onions, white, minced | | | 2 ea Chile, serrano, canned | | | -chopped | | | Coriander, chopped fine | | | Salt | | | Pepper, black | | 1
| pinch | Sugar, granulated |

Procedures:
| 1 | Peel and mash very ripe avocados. | | 2 | Mix well with remaining ingredients and pile into a serving dish with an avocado pit in the center. | | 3 | (this is supposed to keep the guacamole from turning dark). | | 4 | If not using immediately, cover tightly with foil or plastic wrap and refrigerate. | | 5 | Use etiher as a sauce or a salad. | | 6 | Also an excellent dip. |
