Ingredients:
16 ozHoisin sauce
1 cupSoy sauce
2 tbspWhite wine vinegar
2 tbspDry sherry
4 tbspOriental sesame seed oil
4 tbspDijon mustard
3 tbspGarlic -- minced
1 Juice of lemon
Pepper -- to taste
1 tspCumin
2 tspFennel seed -- crushed
2 tbspMirin
1/3 cupOrange juice
Procedures:
1Combine all the ingredients in a large bowl and adjust to taste.
2Flavors tend to dilute during cooking so keep them strong.
3Use as marinade or a basting sauce.
4Rub the sauce into the meat and refrigerate coverd for 8-10 hours
