| | Grapefruit, pink, peeled | | | -seeded and sectioned | | 6
| | Bibb lettuce heads, torn in | | | -bite size pieces | | | POPPY SEED DRESSING | | 1/4
| cup | Onion, chopped (to ?cup) | | 3/4
| cup | Vinegar, tarragon | | 2
| tbsp | Vegetable oil | | 2 1/2
| tbsp | Poppy seeds | | 1
| tbsp | Sugar | | 1
| tsp | Salt | | 1
| tsp | Dry mustard | | 3/4
| cup | Oil, vegetable |

Procedures:
| 1 | Combine mandarin oranges, grapefruit sections, and lettuce in a large salad bowl; toss lightly. | | 2 | Serve with poppy seed dressing. | | 3 | Poppy seed dressing: combine first 7 ingredients in container of electric blender; blend well. | | 4 | Slowly add ?cup vegetable oil, continuing to blend until thick. | | 5 | Pour into a jar with a tight-fitting lid, and chill. | | 6 | Shake well before serving. | | 7 | Yield: 2 cups food exchange per serving: 1 fruit exchange + 1 fat exchange |
