Ingredients:
1 lbsAsparagus
3 tbspOil, peanut
3/4 lbsRaw shrimp
- peeled and deveined
5 Mushrooms, sliced
2 tspCornstarch
1/4 cupChicken or Vegetable broth
-OR- Water
2 tbspSoy sauce
1 tbspMirin or sherry
1 dashSugar
Salt, pepper
Procedures:
1Break off woody ends from asparagus and cut spears into ?inch diagonal slices.
2Heat half of oil in wok or skillet and cook asparagus until bright green.
3Push asparagus to one side.
4Add remaining oil and saute shrimp and mushrooms 2 minutes.
5In bowl, combine cornstarch, broth, soy sauce, mirin and sugar.
6Stir into asparagus mixture.
7Season to taste with salt and pepper.
8Cook 1 to 2 minutes longer
