Lemon ginger syllabubs

Ingredients:
1 1/4 cupWhipping cream
1/3 cupSugar
1 Finely grated lemon peel
2 tbspLemon juice
2 Pieces stem ginger, chopped
1 Egg white
2 Kiwifruit, peeled, cut in
-fourths, then sliced
4 tspStem ginger syrup
Lemon twists
Stem ginger slices
Cookies
Procedures:
1Whip cream and sugar until cream begins to thicken.
2Add lemon peel and juice and whisk until thick and velvety.
3Fold in stem ginger.
4Whisk egg white stiffly and fold into cream mixture.
5Place kiwifruit in bottom of 4 glasses.
6Sprinkle with stem ginger syrup.
7Top with cream mixture and chill 2 hours.
8Garnish with lemon and stem ginger.
9Serve with cookies.
10Variation: substitute pitted cherries, sliced peaches or nectarines for kiwifruit
