Leng qing gua (cold cucumbers with garlic)

Ingredients:
1 lbsCucumbers
2 tspSalt
2 tspSugar
1 tbspWhite rice vinegar
1 1/2 tbspPeanut oil
1 tbspCoarsely chopped garlic
Procedures:
1Slice the cucumbers in half lengthways.
2Using a spoon, remove the seeds.
3Cut the cucumber halves into 3-by-?inch pieces.
4Combine the cucumber pieces with salt and allow to sit in a colander set inside a bowl for 10 minutes.
5Rinse them in cold water, blot them dry and toss with the sugar and vinegar.
6Heat a wok or large frying pan until it is hot and add the oil and garlic.
7Stir-fry for 15 seconds until it is lightly brown.
8Mix with the cucumbers and serve.
