Low-fat: spicy chicken noodle soup

Ingredients:
1/2 lbsChicken breast
-boneless, skinless
1/4 lbsRice vermicelli noodles
3 Garlic cloves, minced
1 tbspGround cumin
1/2 tspTurmeric
5 cupChicken stock
1/2 tspLime rind, grated
2 tbspLemon juice
2 tspGingerroot, chopped
2 tspGranulated sugar
1 tspChili paste
1 cupBean sprouts
1 cupRomaine lettuce, coarse chop
2 tbspFresh coriander, chopped
Procedures:
1Cut chicken into thin strips.
2Break noodles into 3-inch long pieces.
3In saucepan, combine garlic, cumin and turmeric; cook over medium heat, stirring constantly, for 1 minute.
4Add chicken, stock, lime rind and juice, ginger, sugar and chili paste; bring to boil.
5Reduce heat and simmer for 5 minutes.
6Add noodles; simmer for 3 minutes.
7Add bean sprouts and romaine lettuce; cook for 1 minute.
8Ladle into individual bowls and sprinkle with coriander.
9Per serving: about 155 calories, 15 g protein, 2 g fat, 18 g carbohydrate
