Ingredients:
1 Chicken breast
DREDGING MIXTURE
2 tspCornstarch ?ts Pepper
1/2 tspSalt
THICKENER
2 tbspSherry 2 tb Cornstarch
3 tbspChicken broth
OTHER INGREDIENTS
4 ozMushrooms, sliced 2 To 3 slices ginger root
4 ozPea pods, strings removed -minced
1 Clove garlic minced 2 tb Oil
Procedures:
1Skin & bone chicken, then dice.
2Combine dredge ingredients, dredge chicken in mixture to coat.
3Mix sherry, chicken broth and cornstarch to form paste.
4Heat oil in wok (or fry pan) add garlic & ginger, stir-fry a few times.
5Add chicken, stir-fry 1 minutes.
6Add mushrooms and pea pods, stir-fry 2 - 3 minutes.
7Add sherry/broth/cornstarch paste to thicken.
8Serve with rice.
9( a 4 oz can of button mushrooms can be used instead of the fresh.
10Use liquid in place of chicken broth)
