Ingredients:

| tsp | Sherry | | 1/2
| cup | Water | | 3
| tbsp | White-wine vinegar | | | White pepper to taste | | 1/2
| tsp | Hot oil | | 2
| tsp | Sesame oil | | 4
| cup | Chicken stock | | | Salt to taste | | 1
| tbsp | Soy sauce | | 2
| | Bean curds | | | -each cut in 8 pieces | | 1
| | Egg, beaten | | 2
| | Scallions, chopped |

Procedures:
| 1 | Soak cloud ears and golden needles in hot water about 15 minutes or until noticweably increased in size; drain. | | 2 | Shred cloud ears. | | 3 | Cut golden needles in half. | | 4 | Combine pork with 1 tablespoon corn starch and sherry. | | 5 | Mix 2 tablespoons cornstarch with water; set aside combine vinegar, pepper, hot oil, and sesame oil in bowl; set aside. | | 6 | Bring chicken stock, salt, and soy sauce to boil in large soup pot. | | 7 | Add pork; boil 1 minute. | | 8 | Add cloud ears, golden needles, and bean curds; boil 1 minute. | | 9 | Add cornstarch mixture; stir until thickened. | | 10 | Lower heat. | | 11 | Add vinegar mixture. | | 12 | Taste; adjust seasoning if necessary. | | 13 | Slowly stir in egg. | | 14 | Garnish with scallions. | | 15 | Smile (from 1001 oriental recipies |
