Nuri's hot and sour soup

Ingredients:
1/4 cupCloud ears
1/4 cupGolden needles
1/4 lbsPork, shredded
-into matchstick size
3 tbspCornstarch
2 tspSherry
1/2 cupWater
3 tbspWhite-wine vinegar
White pepper to taste
1/2 tspHot oil
2 tspSesame oil
4 cupChicken stock
Salt to taste
1 tbspSoy sauce
2 Bean curds
-each cut in 8 pieces
1 Egg, beaten
2 Scallions, chopped
Procedures:
1Soak cloud ears and golden needles in hot water about 15 minutes or until noticweably increased in size; drain.
2Shred cloud ears.
3Cut golden needles in half.
4Combine pork with 1 tablespoon corn starch and sherry.
5Mix 2 tablespoons cornstarch with water; set aside combine vinegar, pepper, hot oil, and sesame oil in bowl; set aside.
6Bring chicken stock, salt, and soy sauce to boil in large soup pot.
7Add pork; boil 1 minute.
8Add cloud ears, golden needles, and bean curds; boil 1 minute.
9Add cornstarch mixture; stir until thickened.
10Lower heat.
11Add vinegar mixture.
12Taste; adjust seasoning if necessary.
13Slowly stir in egg.
14Garnish with scallions.
