Ingredients:

| | Egg White, beaten | | | Salt, sprinkling | | 1

| tbsp | Cornstarch | | 1/2
| tsp | Baking Powder | | 1
| | Egg Yolk, beaten | | 2
| cup | Water | | | Oil, for deep frying | | 2
| tsp | Vegetable Oil | | | Ginger root, 1 inch, minced | | 1
| | Garlic Clove, minced | | 1
| tsp | Orange Zest, thin strips | | 1
| tsp | Dry Mandarin Zest, hydrated | | 1
| | Scallion, chopped | | 2
| tsp | Oriental Chili Sauce | | 1
| tbsp | White Cooking Wine | | 2
| tbsp | Chicken Broth | | 1/2
| tbsp | Soy Sauce | | 1
| tbsp | Sugar |

Procedures:
| 1 | * for tenderness and appearance, be sure to cut the beef strips diagonally across the grain. | | 2 | In a small bowl, toss beef strips with a sprinkling of salt. | | 3 | Stir in beaten egg white. | | 4 | In a medium bowl, prepare batter by combining flour, cornstarch and baking powder. | | 5 | Mix egg yolk with half of the water and add. | | 6 | Whisk in additional water until a smooth, runny batter develops. | | 7 | Heat oil to 32Dip beef strips in batter. | | 8 | Carefully place strips in hot oil and fry for about a minute or until batter is set. | | 9 | Drain and set aside. | | 10 | Keep oil hot. | | 11 | In another wok, heat a tablespoon of oil. | | 12 | Combine and add ginger, garlic, orange zest, mandarin zest and scallions. | | 13 | Stir fry for about 30 seconds. | | 14 | Combine and add chili sauce, wine, chicken broth, soy sauce, and sugar. | | 15 | Stir until thick and shiny. | | 16 | Keep warm. | | 17 | Re-fry beef strips. | | 18 | Drain. | | 19 | Quickly stir into thickened orange sauce. | | 20 | Serve hot with bowls of steamed rice. | | 21 | Serves 4 |
