Ingredients:
1/2 lbsBeef Flank
1 Egg White, beaten
Salt, sprinkling
1 tbspFlour
1 tbspCornstarch
1/2 tspBaking Powder
1 Egg Yolk, beaten
2 cupWater
Oil, for deep frying
2 tspVegetable Oil
Ginger root, 1 inch, minced
1 Garlic Clove, minced
1 tspOrange Zest, thin strips
1 tspDry Mandarin Zest, hydrated
1 Scallion, chopped
2 tspOriental Chili Sauce
1 tbspWhite Cooking Wine
2 tbspChicken Broth
1/2 tbspSoy Sauce
1 tbspSugar
Procedures:
1* for tenderness and appearance, be sure to cut the beef strips diagonally across the grain.
2In a small bowl, toss beef strips with a sprinkling of salt.
3Stir in beaten egg white.
4In a medium bowl, prepare batter by combining flour, cornstarch and baking powder.
5Mix egg yolk with half of the water and add.
6Whisk in additional water until a smooth, runny batter develops.
7Heat oil to 32Dip beef strips in batter.
8Carefully place strips in hot oil and fry for about a minute or until batter is set.
9Drain and set aside.
10Keep oil hot.
11In another wok, heat a tablespoon of oil.
12Combine and add ginger, garlic, orange zest, mandarin zest and scallions.
13Stir fry for about 30 seconds.
14Combine and add chili sauce, wine, chicken broth, soy sauce, and sugar.
15Stir until thick and shiny.
16Keep warm.
17Re-fry beef strips.
18Drain.
19Quickly stir into thickened orange sauce.
20Serve hot with bowls of steamed rice.
