Pea jelly (chinese version of yokan)

Ingredients:
1 lbsSplit peas
1 1/2 cupSugar
1 tbspGelatin
Water
Green food coloring
(if desired)
Procedures:
1Soak split peas overnight in 6 c water.
2Drain.
3Pressure cook over low heat in 5 c water for 1 hr or until very soft.
4You may cook on top of the stove as for soup as well.
5Strain peas into a saucepan.
6Soak gelatin in ?c water.
7Mix peas, sugar, gelatin, and food coloring.
8Let set in fridge at least 4 hrs or until set.
9Cut into squares and serve
