Scallion pancakes

Ingredients:
1 cupFlour
1/3 cupWater, boiling hot
2 tbspScallion greens, minced
2 tspLard or Crisco
1/2 tspSalt
4 tbspOil
Procedures:
1Mix flour and water.
2Add a little more flour or a little cold water if dough is not the right consistency.
3Knead until smooth.
4Let rest 15 min. roll dough into a cylinder and divide into 6 pieces.
5Flatten each piece into a 4" circle.
6Brush with softened fat and sprinkle with salt and scallions.
7Roll each pancake into a long thin spiral and flatten it.
8Fold this spiral into a square and flatten again.
9Roll into a short fat spiral and flatten this to a 4" circle.
10Heat 3 t oil and fry each piece until golden (flip once to cook both sides).
11Add a teaspoon of oil or so between pancakes if the oil is too depleted.
