Procedures:
| 1 | Partially freeze chicken and slice thinly against the grain. | | 2 | Transfer to a deep, medium bowl. | | 3 | Soak dried mushrooms in hot water for 30 minutes; drain well and shred. | | 4 | For the marinade; mince garlic and ginger in food processor. | | 5 | Add remaining ingredients and process for 2 seconds. | | 6 | Pour over chicken, turning to coat. | | 7 | Cover and marinate for 30 minutes at room temperature or up to 4 hours in refrigerator, stirring occasionally. | | 8 | For the sauce; mix together all of the ingredients in a food processor until well-blended. | | 9 | Set aside. | | 10 | (note: marinade can be prepared up to 2 days ahead and refrigerated). | | 11 | For the stir-fry; heat wok or large skillet over high heat. | | 12 | Add 1 tablespoon each peanut and sesame oil. | | 13 | Add chicken and stir-fry quickly until pieces are opaque; do not overcook. | | 14 | Remove pieces to a bowl or large plate as they cook. | | 15 | Repeat with remaining oil and chicken. | | 16 | (note: recipe can be prepared ahead to this point). | | 17 | Return all of chicken to wok, add mushrooms, sesame seeds, and sauce; stir-fry until heated through. | | 18 | Mix in half of the lemon slices. | | 19 | Taste and adjust seasoning with salt and pepper. | | 20 | Arrange on warmed serving platter. | | 21 | Garnish with remaining lemon slices and serve with fluffy white rice. | | 22 | Bon appetit light and easy special |
