Ingredients:
1/2 lbsChinese noodles, or
1/2 lbsLinguine
2 tspSesame oil
1/2 cupSesame paste
1/2 cupChicken broth
2 tbspSugar
1/2 tspSalt
1/2 tspFreshly ground pepper
1 tspFreshly grated ginger
1/2 tspFreshly minced garlic
2 tspRich wine vinegar
1/2 cupFresh bean sprouts
1/4 cupFinely minced cucumber
1 tbspChopped chives
Procedures:
1Cook noodles until al dente.
2Rinse in cold water, drain well, and toss with sesame oil.
3In another bowl, mix sesame paste, chicken broth, sugar, salt, pepper, ginger, garlic, and vinegar using a wire whisk.
4Add noodles (once cool) and bean sprouts to above mixture and blend well.
5Taste.
6Adjust seasoning if desired.
7Place noodles in glass bowl, cover with plastic wrap, and refrigerate for two hours.
8Remove from refrigerator, divide onto small plates, top with cucumber and chives.
9Makes four small servings.
