Ingredients:
| 1/2
| lbs | Chinese noodles, or | | 1/2
| lbs | Linguine | | 2
| tsp | Sesame oil | | 1/2
| cup | Sesame paste | | 1/2
| cup | Chicken broth | | 2
| tbsp | Sugar | | 1/2
| tsp | Salt | | 1/2
| tsp | Freshly ground pepper | | 1
| tsp | Freshly grated ginger | | 1/2
| tsp | Freshly minced garlic | | 2
| tsp | Rich wine vinegar | | 1/2
| cup | Fresh bean sprouts | | 1/4
| cup | Finely minced cucumber | | 1
| tbsp | Chopped chives |

Procedures:
| 1 | Cook noodles until al dente. | | 2 | Rinse in cold water, drain well, and toss with sesame oil. | | 3 | In another bowl, mix sesame paste, chicken broth, sugar, salt, pepper, ginger, garlic, and vinegar using a wire whisk. | | 4 | Add noodles (once cool) and bean sprouts to above mixture and blend well. | | 5 | Taste. | | 6 | Adjust seasoning if desired. | | 7 | Place noodles in glass bowl, cover with plastic wrap, and refrigerate for two hours. | | 8 | Remove from refrigerator, divide onto small plates, top with cucumber and chives. | | 9 | Makes four small servings. | | 10 | Enjoy! let me know how you enjoyed it |
